
Croissantly’s Journey
Hi, I'm Noemie Falzon, the pastry chef and baker behind Croissantly.
With over 12 years of experience, I trained in some of the finest pastry schools and bakeries in France, where I developed a deep respect for traditional techniques and quality ingredients.
In 2021, I moved to Dublin and continued my journey with Tartine Organic Bakery, followed by Russell Street Bakery, where my passion for artisan baking grew even stronger.
In 2024, I took a leap of faith and founded Croissantly, starting with a simple table of freshly baked pastries at the Bernard Shaw in North Dublin. What began as a small market stall quickly grew through the support of our customers and community.
Today, Croissantly has its own home in Dún Laoghaire, where we bake fresh pastries daily and continue to develop new flavours and products inspired by both French tradition and modern creativity.
You can also find us every Sunday at Marlay Park CoCo Market (10:00 AM - 4:00 PM).
This is only the beginning of our journey, and we look forward to sharing many more bakes, flavours, and moments with you.

Alongside our pastries, we also offer a selection of indulgent cookies and brownies, made with the same attention to quality and detail.
