Hi, I’m Noemie Falzon, the pastry chef and baker behind Croissantly. With over 12 years of experience, I trained in some of the finest pastry schools and shops in France before moving to Dublin in 2021. Here, I worked with the renowned Tartine Organic Bakery, and later at Russell Street Bakery, where I fell even deeper in love with the craft of baking.
In 2024, I took a leap and started Croissantly — with nothing more than a table of fresh pastries at the Bernard Shaw in North Dublin. From those humble beginnings, Croissantly has grown into a beloved weekend bakery, now trading every Saturday in Bushy Park Market and every Sunday in Marlay Park CoCo Market.
